Etna Rosso Tornatore
Fruity on the nose, this wine shows spice, red berries and cherry. A persistent, full flavour with a hint of minerality, balanced tannins and full bodied.
Pairs perfectly with our San Marzano Tomato Orzotto, cooked spelt topped with beetroot, winter vegetables, crispy cavolo nero and sweet potato crisps.

Etna Bianco Tornatore
The Etna Bianco has aromas of grapefruit, white peach and herbs on the nose along with a freshness and minerality on the palate.
★ Pairs perfectly with our Honey, Lemon & Thyme Chicken, marinated chicken breast, pan-roasted and served with charred vegetables and romesco sauce.

Terre di Giumara Grecanico IGT Sicilia Caruso-Minini 
Fresh and zesty with aromas of pear, apple and orange blossom, the Grecanico grape has Sauvignon-like aromatics and striking acidity.
Pairs perfectly with our Crab Fettucine, in a rich lobster bisque, finished with butter, dill and red chilli.

About Sicily

The homeland of the iconic fortified wine: Marsala. You’ll also find rich, full-bodied red wines and zesty, refreshing white wines that pair well with seafood.

Sicily has a warm Mediterranean climate, tons of sunshine and lots of heat. These conditions, combined with a higher elevation and limestone soil, mean increased aromatics, light fresh fruit flavours, lower alcohol levels and higher levels of acidity.

With more vineyards than any other Italian region and 34% of these being organic, Sicily is not short of fantastic wines.

Focus Producers

Tornatore
One of the largest and oldest producers in the region, Tornatore owns 46 hectares of vineyards on the north side of active volcano, Mount Etna. Established in 1865, the estate is still run by the same family. While the varietals used are traditional, their winemaking style is more modern in approach, with lower alcohol and more emphasis on fruit.

Caruso & Minini 
Caruso & Minini is a joint venture between two families who united their own family traditions to create the winery in 2004. Now passed down onto the next generations, the Caruso sisters are running the daily operations of the winery. The winery places a strong emphasis on sustainable viticulture and winemaking practices. They strive to minimize environmental impact while producing wines that express the unique characteristics of their terroir. The have obtained a VIVA Sustainability and Culture certification, demonstrating their commitment.
